Cooking Jamaican Curry Chicken

Before I get into today’s post I would like to take a minute to thank all my loyal readers for the daily support. I read all your comments daily. Today I am responding to one of them. There has been an overwhelming request for this recipe (Jamaican Curry Chicken). Here goes! Please visit this site daily for more tips on healthy cooking.

Ingredients:

1 Whole Chicken (about 2.5lb – 3lb)

4-5 tablespoons of Jamaican Curry Powder

3 Potatoes diced – set aside

1.5 tablespoons of Coconut Oil

2 cups Water

1 Onion chopped

4 stalks Scallion chopped

1 teaspoon of powered Thyme

4 cloves Garlic

1 hot peppers (preferably Scotch Bonnet)

2 teaspoons Sea Salt

1 teaspoons Black Pepper

Preparing:

Remove chicken from the package

Wash the chicken in vinegar and lemon juice or lime juice

Chop chicken into bite-size pieces

Chop the onion, scallion, pepper and garlic in to small pieces

Season the chicken by mixing chicken with chopped onion, chopped scallion, thyme, garlic, hop pepper salt and black pepper

Place seasoned chicken in the refrigerator for 2 hours

Chop the potato in to small pieces

Cooking:

Pour oil into a medium frying/sauce pan on medium/high heat

Fry the chicken pieces for 5-10 minutes

Add the potatoes and water to the pan

Cover and set stove on medium/low heat for 1-1½ hour

Stir occasionally

Serve with plain rice. Enjoy!
